Raspberry-Thyme Shrub

Whether it's a hot summer day or a crisp and cool evening, this sparkling shrub is sure to hit the spot. Just a few juicy ingredients and a splash of O Raspberry Champagne Vinegar is all it takes to shake up a refreshing mixer within minutes. Kick back and quench your thirst!

Ingredients

2 fresh thyme sprigs
7 fresh raspberries
Ice cubes
2 tbsp simple syrup (to make from scratch, see notes below)
1 tbsp O Raspberry Champagne Vinegar
2 tbsp fresh-squeezed lime juice
Sparkling Water
Optional: 1 oz gin

Instructions

Remove the leaves from the 1 thyme sprig and place them in a cocktail shaker.


Add 6 raspberries to the shaker, then mash with the thyme leaves using a bartender's muddler or firm wooden spoon.
Fill cocktail shaker with ice, add O Raspberry  Champagne Vinegar, simple syrup, and fresh-squeezed lime juice. Pour in an oz of gin if desired. Cover and shake vigorously until well mixed and cold.


Strain mixture into a highball glass filled with ice and top with sparkling water.


Thread 1 raspberry onto the remaining thyme sprig and place on the rim of the glass for garnish.

Notes

Simple syrup is a classic component of cocktails and cocktails alike, and is easy to make from scratch as it sounds. Combine 1 cup of granulated sugar and 1 cup of water in a small saucepan and stir over low heat.


Once the sugar dissolves, bring the mixture to a boil. Then, remove from heat, cover, and chill before mixing into your concoction of choice.


Strain mixture into a highball glass filled with ice and top with sparkling water.
